Fine Hand Made Chocolate Making Classes

Class #1: Basics of working with chocolate.

• Review samples of the chocolates we will make in class.
• Review and compare ingredients of different qualities.
• Tempering chocolate several methods and keeping the chocolate tempered while working.
• Forming and dipping fruits and nut clusters.
• You take home 2 to 3 pounds of chocolate

Class #2 Truffles and assorted chocolates

• Review samples of the chocolates we will make in class
• Review and compare ingredients of different qualities.
• Temper chocolate by hand.
• Make truffles fillings and coat them.
• Storing and freezing finished chocolates.
• You take home 2 pounds of truffles.

General Information

Schedule: in 2009 instead of prescheduled dates we will hold classes on weekend days that work best for the student. Week day and night classes may be scheduled if they work with our chocolate making schedule.

• Classes are hands on and are limited to 6 people.
• You are welcome to bring a camera.
• Chocolate and most ingredients we use in the class are available for sale at the end of class. Ingredients may also be purchased year round via mail order or in the retail store.
• All classes are approximately 2.5 hours in length.
• The cost is $200 per person per class.
• Students will take home approximately two to three pounds of the chocolate made in class.
• Classes must be paid for at the time of class reservation.
• Classes must be cancelled or rescheduled two weeks or more prior to each class. There is no refund of payment for classes cancelled within two weeks of the class date.
• What to wear: comfortable clothes and shoes. Please do not wear open toe shoes or sandals. Please bring an apron and baseball hat or scarf.
• Do not wear or bring or wear anything you do not want to get chocolate on.
• The class members share work responsibilities.
• Class subjects may change.
• Parking is available next to or in back of Donnelly Chocolates or on side streets.
